To make the pakoras crispy, always mix the gram flour with cold water. While stirring, add water slowly so that no lumps remain in the gram flour.
If you want to make crispy pakodas like hotel, then you can add rice flour to it. This will make the dumplings very crispy. You can also add corn flour if desired.
You should also pay attention to the consistency of gram flour to make crunchy pakodas. While stirring the besan, make sure that it is neither too thin nor too thick.
Apart from making gram flour batter, vegetables should also be taken care of before making pakodas. The vegetable should not be too thick or fine.
Shortly before making the pakodas, cut the vegetable and put salt in it. If the vegetable is soaked in water, then keep it on a clean towel to absorb all the water.
You also have to take care of the temperature of the oil for frying the pakodas. If you start making pakodas in a hurry, it can make the pakodas soft.
