Chole is very much liked in India, it is made in many ways. Amritsari Chole is one of the very popular dish of North India. This is a street food recipe from Punjab.
First of all, wash the chickpeas thoroughly and soak them in hot water for 7-8 hours or overnight. Now put Kabuli gram, all the spices, ginger, garlic, carom seeds, baking soda, salt as per taste and 3 cups of water and cook on medium flame inside the cooker.
After cooling, open the cooker. Heat oil and ghee in a pan or kadai. Now add cumin, ginger and garlic paste and fry it.
Now add onion paste and cook. Now add tomato puree to it and cook it well till tomatoes melt and oil separates.
Now add red chili powder, turmeric powder, coriander-cumin seeds powder, green chilies and ginger sticks and fry the spices well. Put the puree of pomegranate seeds inside the roasted spices.
Now add boiled gram, garam masala powder, chickpea masala powder, green coriander, roasted musk fenugreek, salt as per taste and water as required and mix all the ingredients well and mash some gram.
In a tadka pan, heat 2 spoons of ghee on medium heat and add red chilli powder to the hot oil and temper the vegetable. Mix the vegetables well.
